Savory Herbed Chuck Roast
Serving: 8 / Prep Time: 5 minute / Cook Time: 55 minutes
Ingredients:
- 3-pound chuck roast
- 3 cloves garlic, thinly sliced
- 1 tablespoon oil
- 1 teaspoon flavored vinegar
- ½ teaspoon pepper
- ½ teaspoon rosemary
- 1 tablespoon butter
- ½ teaspoon thyme
- ¼ cup balsamic vinegar
- 1 cup beef broth How To
- Cut slits in the roast and stuff garlic slices all over
- Take a bowl and add flavored vinegar, rosemary, pepper, thyme and rub the mixture over the roast
- Set your pot to Sauté mode and add oil, allow the oil to heat up
- Add roast and brown both sides (5 minutes each side)
- Take the roast out and keep it on the side
- Add butter, broth, balsamic vinegar and deglaze the pot
- Transfer the roast back and lock up the lid, cook on HIGH pressure for 40 minutes
- Perform a quick release
- Remove the lid and serve!
